Tejtermékek gyártása során visszamaradó romlott tej. Főbb összetevők: Víz (80-90%), tejzsír (főleg trigliceridek), tejfehérje (kazeinek és savófehérjék), tejcukor, tejsav, ásványi anyagok, vízoldható vitaminok (B1, B12, B2, B6, C), enzimek (hidrolázok, oxidoreduktázok), NPN-anyagok (ammónia, szabad aminosavak, karbamid, kreatin, kreatinin, húgysav, hippursav).

A szerves szennyező anyagok koncentrációját, a biológiai terhelést a kémiai, vagy ötnapos biológiai oxigénigénnyel (KOI és BOI5) jellemzik. A lebegőanyag-tartalom, az összes nitrogén (TKN), az összes foszfor koncentrációjának vizsgálata, valamint a zsír-, és olajtartalom meghatározása jellemző a tejipari vizsgálatokra [1]. Vizsgálták a romlott tej Kémiai Oxigénigényét (KOI), a szilárd- és lebegőanyag tartalmát, valamint elemtartalmát (kalcium, magnézium, nátrium, réz, mangán, nikkel, vas) és pH-ját [2].
