Description of the waste generating technology

Gabonaszesz gyártásnál az őrölt szemet vízben szuszpendálják, és 3 óra alatt 85°C-on alfa-amiláz enzimmel keményítőtartalmát vízoldható dextrinekké hidrolizálják. A szem egyéb alkotója (fehérje, csíraolaj, rost) a szilárd frakcióban marad, amelyet szűréssel távolítanak el. Erre a célra egy háromcellás hengeres szűrőt alkalmaznak, melyben a dextrinoldat elválasztása után a maradékot vízzel ellenáramban mossák. A mosóvíz a dextrinoldattal együtt a szimultán cukrosítási és erjesztési lépésbe kerül, ahol a dextrintartalmat amiloglükozidáz enzim glükózzá alakítja, melyet a pékélesztő etanollá erjeszt. A nedves szilárd maradékot szeszgyári törkölynek nevezzük.
