Description of the waste generating technology

Hagyományosan az oliva pogácsát préselik, a kinyert folyadék egy része az olívaolaj, a másik pedig a növényi rostokból származó víz. Az olajat leszűrik és a préselés után visszamaradó anyagot nevezik olíva pogácsának.
Nagyüzemben a pépesített alapanyag egy vízszintes centrifugába kerül (3000 percenkénti fordulat), ahol víz hozzáadásával segítik az olaj kiválásának folyamatát. Menet közben egy lassabban forgó csiga segítségével távolítják el a gép belsejéből az olíva pogácsát. A szétválasztott növényi vizet és olajat ezt követően egy függőleges centrifugában „tisztítják” tovább, 6000 percenkénti fordulaton tudják tökéletesen elválasztani az olajat és vizet egymástól. Ezt nevezik három-fázisú rendszernek, amit Spanyolországban már felváltott egy új technológia, aminek két-fázisú rendszer a neve.
A hagyományos préselési technológiához képest a két-fázisú rendszer egy pasztaszerű hulladékot az úgynevezett 'alperujo' vagy 'két-fázisú törkölyt' eredményez. Ehhez a technológiához kevesebb vízre van szükség, a folyamat végén olivaolajat és nedves hulladékot kapunk [1].
